Splendid Summer Shortcake

With summer coming to an end, this is a good way to use the leftover fruit

Ingredients:

Fresh Fruit (I used sliced strawberries, halved blueberries and grapes, and sliced red plums)

Lemon Juice (I used 1/2 of a fresh lemon. It was not too sour and it gave a great tangy flavor.)

Splenda (If I were a measuring kind of woman, I would say a few Tablespoons sprinkled on top.)

Biscuits (I prefer the kind that are frozen already. They taste just like KFC biscuits.)

Directions:

Cut up fruit to desired sizes (big bites for big mouths, little bites for little mouths). After piling it all in one bowl, sprinkle Splenda on top. Mix together with lemon juice and cover with a lid (or plastic wrap, if your little one has claimed the lid as part of their kitchen). Refrigerate until chilled. Serve alone as fruit salad, or use on top of biscuits for Shortbread dessert. You can even add ice cream or whipped cream, if you like that kind of stuff! It’s a really nice, refreshing summer dessert that is quick and easy…and very cheap.

    Mmmm, sounds good! We just might have a shortcake in our future this weekend. I always like to dig out the book, Cook A Doodle Doo! whenever we make it.
